This project aims to formulate freeze-dried musk lime tea cube with high antioxidant activity. This Antioxidant Musk Lime Tea (AMLiT) cube caters modern customers' preferences for convenience, portability, and health promoting product. Five formulation were developed using different composition of black tea, musk lime juice, and peel extracts with binder and sweetener. Then, the formulation were freeze-dried to produce tea cubes and evaluated. Analysis conducted were moisture content, pH, solubility, ash content and antioxidant activity using DPPH assay. The analysis shows freeze-dried tea cube of Formulation 4 (F4) give the highest antioxidant activity compared to other samples. Physicochemical properties obtained for F4 are moisture content 1.42%, pH 5.21, 0.53% ash content and completely soluble in 3 minutes.
